This sauvignon blanc has laser-like acidity mixed with limestone, grass, lime skin, and a splash of ruby grapefruit. The bouquet is a bit tight at first, but if you let the wine warm up slightly, it unfolds into something very compelling. I loved the texture created by the acidity and minerality, the wine really grips your palate and takes it for a ride. Wish I'd bought more, hopefully Garagiste re-offers it.
