Saturday, February 26, 2022 - Relatively deep gold. However, no sign of premox, appropriately oxidised for a 12 year old Chablis. A bouquet of grapefruit and lemon zest, some crunchy green apple, wet oyster shell, tide pool and a touch of baking spice. On palate, mature, classic Chablis. Taut and dry. Compared with in my 2017 tasting note - as you would expect - the Séchet less primary and fruit forward, more mineral and saline. Steely and chalky with fine lemon and lime citrus, peaches, greengages and green apples. Vibrant, fresh acidity. Satiny mouthfeel. Moderate alcohol (13% ABV) and - as is the practice with this Domaine - no oak. Finishes long, dry and mineral. This Séchet should continue to drink well, in this style, beyond 2030. If the Séchet is this good, I look forward to opening my 2010 Louis Michel Les Clos ...
