Saturday, August 24, 2019 - This does seem a bit behind from where you'd expect it to be in the ageing process. Lots of lime, bits of presevered lemon, that classic custardy/cheesy thing on the back palate, with a good dose of gunflint and white pepper. There is a decent finish on this and no shortage of acidity, but it's lacking a lift I typically find on HVS. Very nice, but somewhat disappointed, particularly given the price. No nutty notes here, nor even any riper tropical elements. These either need a lot more time, or they've just entered some kind of stasis.
