Wednesday, August 1, 2012 - A big wine with lots of structure and oak but scant fruit and hardly detectable Chardonnay aromatics, even of the flinty Chablis variety. A papery aftertaste detracts and may indicate un-neutralized filtration media or high sulfur dioxide levels. The wine tastes oxygen starved and overprotected with SO2. Saving another bottle to see if development will occur with time as the wine clearly started out with good juice. Tasted less chemical on day 3.
