Friday, July 5, 2013 - The wine pours a golden straw color much like a young sauternes with thick, long legs. An incredible nose of apple pie, pear blossom, honey and tropical fruits come to the fore. Regrettably though, the champagne is rather tired and not as vivacious as younger vintages given that there aren't many bubbles in the glass. On the palate, the wine definitely points to an aged, oaky and buttery white wine with chardonnay being the predominant grape. Butter crepes, apples, peaches are ever so present on the palate. There is sharp acidity towards to the end to keep the wine going. There is still a minor, yet discernable mousse in the mouth to remind the drinker that this tipple, after all, is a champagne. Either way, this bubbly is a great effort from Piper despite a lack of balance. Interesting experience nonetheless.
