Sunday, September 1, 2013 - A private dinner (Restaurant Schloss Schauenstein ***, Fürstenau, Switzerland): Incredibly beautiful nose, aromatic yet calm, deep yet ethereal, roses and Asian spice, rosehip, cherry and crushed red berries, subtle and layered, new oak completely absorbed, freshness from the stalks, an essence of Vosne; after about an hour it goes through a riper, more forward phase when it loses a bit of its subtlety and nuance, before almost returning to its original state; on the palate a wonderfully silky and creamy texture, incredibly elegant and beguiling, seamless and sexy, perfectly balanced, fresh without even a hint of dryness and the perfect coolness from the limestone bedrock, lovely stuffing of sweet and ripe, complex fruit, its flavours ranging from peach to black cherry, develops floral notes; on the palate too, it goes through a more tannic and plummy phase, with a hint of liquorice; excellent length, complete finish. A stunning wine, drinking beautifully now and from 2020, although it is unlikely shut down completely.
