Saturday, July 19, 2014 - Wonderful grilled meat, black pepper (Nepali Timur, specifically), Bergamot, balsa and even light cedar wood aromas. Meaty, woodsy flavors continue on the palate and are joined by overripe strawberry. An elegant, silky texture on the entry gave way to plenty of acidity to cut through the richness of Steak au Poivre, and a long, lingering finish with just enough tannin to know it would reward several years in the cellar.

While it doesn't yet have the track record of their other SVDs, the Pivot is one to watch. It strikes me as slightly more masculine, but without venturing too far from Littorai's style.
