Saturday, August 6, 2022 - Blend: Chardonnay, Pinot Noir and Meunier
from cool climate spots across Victoria, including Whitlands Plateau,
Strathbogie Ranges and the Upper Yarra Valley.
Primary fermentation in stainless steel tanks with cultured yeast.
Plus a few select parcels fermented in oak vessels.
Blending of new base wines with reserve wines from previous years.
Second fermentation in the bottle on yeast lees for at least 12 months.
Riddling, disgorging, dosage plus 3 months bottle age.
12.5% Abv.
Background: Robert-Jean de Vogüé (d. 1976) of Moët & Chandon
promoted the culture of sparkling wine round the world: Argentina,
California, Brazil, China, India and since 1982 Australia.
