Friday, January 5, 2024 - Green apple, seaweed, light soy sauce, toasted almonds, toasted hazelnut, lemon curd. This is really fantastic. Don't know what year this was bottled, but I would take a gander it wasn't super recent, because this is showing some really nice savory notes. Really wonderful balance between the nutty savory side and the rich lemon and bright apple. Very persistent mousse. Long finish. Great complexity. Very rounded and rich, with the backbone of intense acidity keeping you coming back for more. Picked up on a whim after a bad day, and boy is my day a hell of a lot better now! Amazing paired with some basic sushi
