Friday, April 8, 2011 - Drunk with dinner at Watel's Bistro in Dallas, TX with duck and pork, and veal sweetbreads. Significant notes of mineral. Very dry, with very dark fruits fading away with little bite. Relatively mild acidity. Bubbles don't last particularly long in the chilled bottle or glass. Paired well with dinner, and surprisingly with a pipe after dinner.
