Friday, December 20, 2019 - Pulling three of these over the course of 2 days justifies a note or two about the progress of this batch of bubbly. We pulled the first bottle to help lubricate the evening as JGW joined us for dinner. The mousse lingered long from the roiling stream of bubbles. They seemed a bit courser this time around. The bead of bubbles barely subsides over the course of the evening. JGW seemed to enjoy it by quickly downing two glasses. A light yellow gold meets the eye as the bubbles gush to the top. A nose of red apple and lemon zest. On the palate, more apple than lemon zest but with more nuance, including apple cider and maybe a touch of brioche on the finish. 12% alc. With steamed shrimp with JGW and then beef Shack attack burgers as we replicate our annual NYC dinner watching Rudolph. 12.19-20.19. Recommended.
