Saturday, December 25, 2021 - Disgorgement date of 1/2021. Medium gold in color with large aggressive bubbles. Wonderful nose – green apples, peaches, toast, raw marzipan, and toasted almonds. Bubbles are a bit aggressive on the tongue. Medium-light bodied, lively acidity, and on the sweeter side of a brut (12g/l according to the tech sheets). Palate of green apples, lemon, oranges, toasted brioche, a bit of lychee, and underripe peach. Medium finish that is green apple and toast.

While this shows more Champagne like notes than other entry-level Cali sparkling, you won’t mistake this for Champagne. But at the current prices, I much rather have 2-3 bottles of this around. Absolutely fantastic for a domestic bubbly and a great way to start the Christmas feast.
