Saturday, July 21, 2012 - By the glass at Hog Island Oyster in San Francisco. Pretty nice stuff - classic notes of lemons and limes, green apples and a twist of minerality on the nose. The palate was bright and balanced, with lacy mousse and fine acidity running through fresh green apple flavours of green apples with a touch of limes and some lemon zest. Hints of spice and mineral hovered in the background at the finish. A bit simple at this stage of its development, but still pretty yummy. It was great with fresh-shucked oysters, even better with lobster and best with a wonderful clam chowder.
