Thursday, July 16, 2015 - Crystal clear light straw yellow color. Mesmerizing scent of rock dust and minerality paired with lovely apples, pears, gooseberries and newly mowed grass. Nose is perhaps a bit introvert, and there seems to be more under the surface. Taste is concentrated compared to the appellation, perfectly balanced and delightful in its elegant simplicity. I taste lots of nicely integrated acidity and a steely minerality combined with half-ripe sweet cherries and farm apples. On the verge of being too much acidity right now, but it works perfectly when paired with mollusk. I really like this producer.
