Despite the age, the mousse was lively and relatively long lived. The bubbles provided a continuous stream of beads throughout dinner. Excellent mouthfeel and weight - truly a full bodied wine. Nevertheless, the flavors were balanced and feminine. In Riedel sommelier vintage flutes. (The first time I’ve ever carted glassware into a restaurant.) Roasted veal ribs with a cracked pepper coating. This was not the best pairing, but it worked well. The wine stood up well to the dish. A beautiful wine for a beautiful lady.
