Friday, February 12, 2021 - When Pnp, the wine is pale purple in colour, which is a rather worrying appearance. The wine is not expressive on the nose and palate.

After having 1-4 hours of aeration (in a Zalto Burgundy glass), the wine starts to turn into deep garnet, and flavours of red fruit, minerality, mushroom, meat and rose petal jam starts to reveal themselves. It is a lot more intense and a tad too sweet for a Gevrey Chambertin, but all balanced by fruit-wrapped acid and very find tannins.

The wine only starts to harmonise in the 5th hour, and it keeps on getting better.

This is definitely too young to be enjoyed now. Will revisit after a few years of cellaring.
