Friday, January 24, 2014 - Oak dominating the nose a bit upon opening: dill, vanilla and mocha coming through. With time in the decanter the ripe dark fruit starts to shine more and more. Cherries, cassis and some graphite.
Full bodied, smooth and pretty balanced by the acidity. Ripe dark berry fruit bordering raisiny. Plentiful oak here as well. Good balance otherwise and long on the finish.
With ox sirloin the oak really stepped aside and the (beautiful!) CS pushed through with classy cassis to pencil shavings character. Very nice pairing! Otherwise I wouldn't bother with such a modern approach.
