Sunday, February 5, 2023 - Decanted this bottle for only 30 minutes and it was almost identical to our previous bottle about 7 months ago. In summary - a very satisfying, dark and savory Pinot Noir that paired extremely well with our soy sauce/sesame oil/ginger/garlic/brown sugar/dry sherry marinated salmon. Would consider enjoying this wine in the next year or two.
