Monday, November 9, 2020 - The bubbles have faded a bit to a now perfect carbonation level. Pours a golden straw color; if it weren't for the bubbles, it would look like a viogner. Compared to prior tastings, the acidity and green apple are much more balanced, with the nutty flavors becoming a bit more prominent. This particular bottle had the slightest bit of oxidation, which made it much better overall. Drank over two days (stored overnight with a champagne stopper) with no impact to the carbonation and oxidation.
