Wednesday, May 13, 2015 - The grapes were pressed after 102 days of drying. This wine has dark garnet to brick red colour. On the nose are layers of dried red cherry, dried black mission figs, leather, tobacco, toasted oak, cola, truffle, and dark cocoa notes. The palate is smooth, intense, and balanced with elegant flavours of dried red cherry and subtle oak notes mingling with smooth, delicate tannins. These flavours are well balanced with the acidity and tannins which lead to an extremely long, warm, lingering finish. Wine and food pairing suggestions include osso bucco, veal parmigiana, grilled portabella mushroom, traditional Italian meatballs in Bolognese sauce, charcuterie, mushroom risotto, grilled veal or lamb, and dark chocolate.
