Monday, August 18, 2014 - Togni's 1985 Cabernet Sauvignon is still an opaque deep red. As it unfurls in the decanter, the wine unwillingly giving up aromas of blackcurrant, hot bricks and cedar, and on the palate it remains almost painfully structured and tight-nit, with a very deep core of crunchy, savory fruit. The tannins, however, are hard rather than green, and I believe this wine simply needs another decade in the cellar to open up. In that respect, it resembles a serious northern Médoc from a vintage like '66, '75 or '86. Remarkable.
