Tuesday, February 27, 2024 - Dinner at Eat Fine (Chicago, IL): #06-13, 9% abv. Been a while since I last had this. I had originally planned to check in once a year, but that definitely didn't end up happening. It's still as good as I remember it, though not as electric and racy. It's settled down some, showing more integrated balance, though the bright and intense minerality is still very much on full display. The acidity is more sedate and rounded and for the first time, starting to show a bit of maturity.
