Sunday, April 4, 2021 - After taking a few minutes to wake up, the 12 Dauvissat Séchet really shows a lovely, mature nose, so typically Chablis with its marine notes (which here meld typical oyster with a slightly umami, seaweed note) and Meyer lemon. Really beautiful and probably at its apogee already.
