Saturday, May 17, 2014 - What a beautiful Cabernet Franc. This was an evolving wine that changed and changed and changed. Amazing.
Displays a dark ruby color with light sediment. Legs. Awesome.
Its nose is intoxicating. Green capsicum with wet potting soil. White pedals and dank forest floor. Tobacco and berry stems.
Tight, like drinking a velvet Elvis poster. There are no crunchy tannins, its unlike most Cab Francs I have ever had.
Bitter cocoa, earth, old cranberry, cedar, cured game. It develops different flavors as it opens up. Incredibly complex and sophisticated at the same time. Wonderful.
