Thursday, February 7, 2008 - Decanted 1 hour. First sample straight from the bottle was very closed, and somewhat bitter. Time in the decanter allowed some nice smokey aromas and flavors to come through. Black cherry, bacon fat, and chocolate flavors also. Finish was medium short, and smokey. The longer it spent in the decanter, the more enjoyable it was. Left 1/4 bottle in decanter overnight, and will sample later today and report.
Day 2: After 24 hours in the decanter, I approached this Syrah again. Nose is still smokey, and flavors of black cherry and bacon are still big on the palate. I think the time in the decanter only helped to chill out the tannins and bitterness of this wine. It's much easier to drink and quite enjoyable.
