Wednesday, July 22, 2015 - This is a very high end wine. Consumed as a perfect compliment to a delicious roast chicken dinner. We decanted the bottle one hour before the meal. It was beautiful (no pun intended) burgundy color. Medium bodied with a bouquet and complex finish of cherries, cinnamon, figs and dates. It actually needed some more time in the glass for the tannins to soften. It is probably a year or two from optimum drinking and definitely has much more life left to it than that. Easily the best Williams Selyem I've ever tasted and in the top three of all the pilots I've ever had. The only down side to the wine is that it is only available at the winery.
