Friday, December 19, 2014 - Pure, vibrant aromas of apple, buckwheat, mountain herbs, sherbet and mineral. Medium bodied on the palate with intense acid, amazing balance and texture, great clarity and just a hint of sugar. Original and very good. Riesling-esque. Interesting in that a wine of such high acidity can have absolutely no citrus aromas or flavors. Great with kaiseki. Less interesting as it aired out and warmed up, but when cool and fresh…. electric. Wow. Short synthetic cork. Drink up.
