Thursday, November 14, 2013 - Birthday Dinner (Bishop's - Vancouver, BC): Mature and quite expressive on the nose showing tons of rich salty caramel, yeast, baked green apple, ginger spice, and a touch of lemon juice. Toast, yeast, and rich toffee on the palate, with baked green apple skins, candied ginger, followed by a light lemon zest cut on the end of the palate. This bottle didn't have a ton of bubbles left, but was fully mature and a delicious start to the evening. Lacks the acidity of the top vintages, but wasn't void of acidity. No need to age these any longer, drink up and enjoy. Very good+
