When the cork came out without a 'pop.', I can't say that I felt any better. However from the first pou, it was obviously still bubbly. :) Deep golden color with delicate, fine mousse. Lovely nose of brioche and nuts, pears, wet stone and some lemon. Same elements in the mouth, with even more minerality, excellent yet subtle delineation, with good complexity and layering in a very extended finish. After about an hour it really began to open even more, offering more fruit and deeper delineation. Alas, as we had shared glasses with the chef and our waiter (and I'm happy we did) there was no more to be had. I'm just glad I still have 1/2 case left! Although this wine is ready now, I don't think there is any hurry, especially if the ullage is better.
