Sunday, January 1, 2023 - This is one of the first Saxum bottles that has not blown my socks off. Not that it wasnt rich, or concentrated or bouyed up by good acidity. This wine was still primary and showing little maturation. It was not a great match for Beef wellington. I will let my other bottles sit another 5 years
