Wednesday, July 10, 2019 - Dinner at S.K.Y. (Chicago, IL): Brilliant champagne -- I really do think my palate has converged on preferring the ripe vintages and this wine is a case in point. It's very close to the style that I like -- mild biscuity qualities and a good chalkiness, but most importantly, all balanced by a really generous amount of fruit. Chalky texture with clean minerality as well.
