Wednesday, July 22, 2015 - Burgundy Dinner at Jade Palace (Jade Palace, Forum Galleria, Singapore): Pretty good. This was a classic 1995 - sinewy, athletic, with a touch of austerity without quite being stingy. Little spice and earth and sour cherry notes on the nose were matched by similar tones on the palate. Beneath that, a clean, clear structure of fine tannins and bright acidity stretched away into a nicely chewy, slightly citrusy finish that tailed away with a blush of Beaune spice. Altogether, quite nice, if just a touch characterless. Time to drink up.
