Friday, January 29, 2021 - Open in the bottle for about four hours; it needs time but finally it’s coming around. Nose is a bit subdued, but there are typically Burgundian notes of ripe cherry, earth and mushrooms and savory herbs. Palate is bright with cranberry and a subtle strawberry, but is also brooding with hints of vanilla and dark fruits like plum skin and underripe blackberry. It’s nice now and paired well with a beef sausage and lentil dish, but probably would be really something if I had the patience to wait another 5-10 years.
