Sunday, March 25, 2018 - Cassoulet at Bill's (Wilmette, IL): As far as northern Rhones go, this too was alright. This was dominated by a green apple note (sans the acidity), almost to the point of being overwhelming. The acidity is there but it's relatively low. This just doesn't have enough cut. There's a nice bunch of florals here as well, but for me, it's the bitterness on the backend and the lack of acidity that really kills it for me.
