Saturday, December 31, 2016 - Golden yellow in color. Great nose with loads of red apple, a touch of roasted nuts, meyer lemon, very bright; brioche in the background and just a soft touch. On the palate, vibrant acidity, keeping things very bright; a touch of cranberry and loads of apples. Fine bead, and very delicate effervescence adding great lift. Paired well with raw hamachi with red pepper ponzu.
