Sunday, December 24, 2006 - Slow oxygenation for several hours. Still quite oaky at first, not pure and mineral as I would have expected. It felt very young, good level of acidity, supporting the wine but not getting in the way. Obviously very good. The following day it was even better, both the nose and palate were significantly more complex and open. It had shed its bark and showing great, with a freshness that belied its years. Not showing any sign of fatigue.
