Sunday, December 27, 2015 - Opened to breathe for 1-2h. Regrettably muted, alcohol and oak on the nose, but on the palate there are plenty of black cherries, mineral, tannins, with an acid bite. The tannins give this a round mouthfeel, this is a medium to heavy red with plenty of uhmph, especially with the acid finish. Fairly brash, this needs additional time to mature and develop better manners. Maybe I should have decanted it longer. Tonight with grilled bone-in ribeye and asparagus. Will pump down and try it again tomorrow.

Equally as good on day 2, perhaps greater intensity of mineral and fruit but less complexity.
