Sunday, January 31, 2021 - Birthday Lunch at Caprice (Private Room, Caprice Restaurant, Four Seasons Hotel, Two IFC, Hong Kong): Drank for our friends' joint 50th birthday. Original bottle, which was evident from the cork. Decanted for an hour or so before serving with magnificent French wild pigeon in a rich cocoa sauce then with 40-months Comte cheese and then a superb hazelnut soufle. Semi transparent garnet ruby. Nose is spirited, almost eau de vie, raspberries, roast coffee beans, chocolate. Palate is semi-sweet, very alcoholic in the stomach, segues into raisins and Christmas cake, rich and warming, rounds out nicely with time in the glass. Fully mature but not going anywhere downhill in my lifetime. 92+
