Wednesday, February 22, 2017 - Deep gold, with slight browning (That's age for ya'!). White mousse with persistent medium bubbles. Nose of dried apples, ginger, and bread. On the palate, quince, white pepper, brioche crust. Acidity still bright; enhanced by the bubbles of course. Still solid after all these years! I'm having cheese omelette and Brussels sprouts.
