Tuesday, October 5, 2021 - Had this with raclette. This wine is in a really lovely place right now. The grapefruit/quinine of previous bottles is still present but greatly diminished, and apple is now the dominant fruit note. Still bright, but not overpowering, acidity and some intesting secondary notes that don't detract from the overall freshness. What a lovely wine. It's a shame that there won't be more. RIP Dominique.
