Wednesday, April 14, 2021 - Birthday Dinner with Popiah Party (Jade Palace, Forum Galleria, Singapore): Fresh and lively, this was a nice NV to start the dinner off with. The nose was classic Billecart, with easygoing aromas strawberries, apples and a light dusting of earth and florals. Quite pretty. The palate was simple, but yummy and very nicely balanced, with soft acidity and a gentle mousse swathed around a core of apple and gentle lemon notes. There was just a little hint of mineral and a shade of dried florals at the end. Simple but yummy; this slipped down the throat very easily indeed - just what you would want for an NV at this level.
