Saturday, February 21, 2015 - The nose has a nice yellow fruit profile with some balancing biscuit and a touch of citrus that works well with the initial mineral hit you get on the palette; it's an almost sea-spray contrast and it makes things really interesting.
It winds down a bit as the complexity develops in the mid-palette, with mouth-filling, gentle acidity, delicate, mouse-like bubbles and a chewy, and focussed finish that demands another taste. A really well executed sparkling at $18 and will probably reward a few years in the cellar.
