Monday, February 18, 2013 - I was pretty dismayed when I read the recent comments about the "flawed" wine and even more upset when I decanted the wine and the "gray gobs" appeared. I filtered the wine through a swiss gold coffee filter and had the wine with pasta in a veal osso buco sauce. it really developed in the glass, reasonable fruit and light tannins with a nice finish. I think it will still evolve with more time. I am really concerned about the "gray gobs" and will call the USA importer Michael Skurnik get more info. However, don't take this to a restaurant with out decanting and filtering.

    "We are an importer of Siro Pacenti in NY and I noticed this thread...I don't have a bottle in my cellar to pull a cork, but I did forward the thread to the producer for a response and I will post here. Basically, Giancarlo Pacenti said that the 04 vintage does have an unusually high amount of sediment in the bottle called "quercetina", which he says is "an absolutely naturally occurring substance that thickens under certain conditions. The wines do not change completely and are completely normal."

    Giancarlo doesn't know how to post on this board, but he does speak enough English and offered to talk to anyone on this board who has had a problem. If you email him at barbara@siropacenti.it he will be happy to phone you back and discuss your concerns. Being that it is harvest time however, I would give him a couple weeks leeway to get back to you!

    In any case, the bottom line is that this sediment is not a foreign substance in any way. Standing the bottle up for 24 hrs and a solid decant is highly recommended in this vintage, obviously.
