Thursday, February 18, 2016 - Medium golden. A significant hit of savory oak was a bit disconcerting at first; then we just accepted it. Bright, balanced, with almost bracing acidity. Minerals and earth. This was dramatic from the start, and only gained over four nights. Wow.

    2/20/2016 10:51:00 AM - We appreciate balance, with a good hit of acidity. But note, I said "almost" bracing. It definitely has a lovely acid aspect -- but for truly "bracing," we love vin jaune ....
