Taste: I have always enjoyed Williams Selyem wines, as they have always changed in interesting ways throughout the evening. The mouthfeel throughout was excellent, as it was not too heavy but had some heft. The dominate tastes right after opening the bottle was spicy with black pepper at the tip of the tongue with a light undertone of pleasant green pepper/vegetal flavor. After 15-20 minutes the spiciness was gone and replaced over the next several hours with oscillations in the major flavors where for a time vanilla flavors would dominate with cherry and a hint of blueberry in the background and then the flavors would switch in their dominance. During the times when the vanilla was dominate, the wine was sweet but not too sweet. The wine was an excellent accompaniment to lamb.
