Thursday, May 21, 2015 - Nose: The nose was a bit reticent and shy at first, but, when it opened there was a nuanced rusticity to it with dark red cherries, earth notes, spices, leather, and dark red berries. There is a lovely layering to it as well with an understated quality.

Taste: Medium bodies with medium+ acidity and medium+ tannins that provide a good spine. The structure is still quite present, but it doesn't overwhelm. The rustic quality of Pommard is there with dark red cherries, earth notes, dark red berries and some spice tones. What is also there is the nuanced and understatement as well.

Overall: This was a very pleasing bottle once it opened up. It needed about 2-3 hours of air after first pouring, but patience was rewarded. This is yet another transparent and lovely Bouree that captures the imagination.
