Monday, February 18, 2008 - Bottle Open: Nose of rubber and spice with black fruit undertones. Not as hot as expected and more multi-layered than most Aussie shiraz. The mouth is a bit muted, but an already luscious, mouth coating wine. Medium finish, accentuated by black fruit. Definitely fruit forward, but so far not an OTP oaky fruit bomb. Impressive. 90+

Two Hour Decant: Nose of black currant, bacon fat, blackberry, black tea, black truffle and a hint of cream. Mouth of red currant, bright red fruit on front palate. Luscious, well-integrated tannins, tart blackberries, plum and christmas spices on the finish. Medium-long finish (I usually don't like putting a time to the finish, but this was easily 60+ seconds), good acidity, not overly creamy. This would do well with some lamb or grilled meats. Really starting to open up. There is A LOT going on here. 92-94

Three Hour Decant: Nose has consistent notes as hour 2, but with a bit more black fruit and cream , although a slightly hot nose. Mouth also had consistent notes as hour 2 - very polished wine - ripe strawberry notes. Not flabby at all. Wait at least another year to open a bottle. Should improve for 3-5 years. This is an OUTSTANDING bottle of shiraz. 94+
