Thursday, May 28, 2015 - a glass over lunch, decanted the evening before, and tasting even better because you know it is not one of your precious bottles. Fortunately for me,my joy at seeing what I was about to drink far over-shadowed my embarrassment by bringing such a minor offering (2002 Noon's Shiraz) to what I thought was going to be a casual meal amongst the five of us.
in my opinion, it is no longer appropriate for a wine lover to admonish those brave/fool-hardy souls who choose to vinify their liquid gold in a style many perceive as being "modern" or "new world".
I prefer to accept that red Bordeaux now encompasses a broad and vast spectrum of superb wines that extend from the tight, pure, laser-focussed, and mineral offerings to the opulent, rich, fat and hedonistic wines that are an increasing part of the Bordeaux landscape. Both extremes, and everything in between, can vary from the extremely ordinary to the extremely wonderful, and that is the beauty of the World's most famous wine region.
There can be no doubt, Pavie sits on the far right of the curve, perhaps at the three standard deviation mark to appease you statisticians out there, but for me, it still screams Bordeaux, and it still screams greatness.
Massively concentrated, hedonistic, plush, fat, and ,decadent it is, but there is a mineral and tannic core that keeps everything in check, and serves to remind the drinker that this wine requires a further decade or two to unleash it's full glory.
At the end of the day, nothing has changed since I last visited this wine, and it remains utterly perfect.
