Friday, March 22, 2013 - Dinner at Two Chefs - "Papal" Wines (Two Chefs Eating Place, Sin Ming Ave): Very impressive. This was still a baby, and not very enjoyable when first popped and poured. But as the night went on, it slowly unfurled to show a glimpse of just how good a wine it is. The nose was really ripe, sweet and glycerol-infused straight out from the bottle. Given a bit of air though, it calmed down to show attractive, but rather primary aromas of ripe cassis and blackberries patted down with a bit of damp earth and tobacco. There was some residue of the sweet oak aromas I remembered from the wine's early days after release, but these have (thankfully) toned down significantly. It was on the palate that the wine really showed it chops though. It took about half-an-hour in the glass to open up, but when it did, it came across as a very complete package - round, plush and seductive, with a lush depth to it, yet also beautifully balanced and integrated, with fine tannins giving it a great sense of structure right from the attack and all the way into an effortlessly long finish. There was a lovely purity to its cassis and blackberry flavours as well, in spite of a clear ripeness to the fruit. Quite a brilliant effort really. This was way too young of course, but I was glad that it more or less confirmed the good impression that I got upon release. It should be fantastic in a decade or so.
