Thursday, February 11, 2021 - Beautiful wine with salmon. The high acidity (and I’m assuming low pH) have this wine in suspended animation. Still utterly youthful. Aromatic, complex and correct in every way. Wonderful foil for grilled salmon with mustard sauce. 90
